Pride of Mexico Chihuahua Chipotle uses only 100% of the Morita variety of jalapeño pepper for its consistent and superior flavor. Our pepper is grown, smoked, and processed using century-old techniques in the northern Mexico state of Chihuahua, which is considered to be the only true source of authentic chipotle powder.
This process requires the jalapeño peppers to be left on the plant as long as possible to achieve a dark red, almost purple color and to remove moisture. Next, the whole jalapeño peppers are smoked using ancestral methods over local pecan firewood for several days. During this process, all of the moisture is removed from the peppers, so a one-of-a-kind smoky pecan and complex citrus flavor is created.
